It's best to have a sponge designated just for dishes and nothing else. However, even then you really have to take steps to keep the sponge sanitary.

According to Mythbusters, the average kitchen sponge has more germs on it than a toilet.

I've found a way to keep the sponge sanitary, tho...after using, squeeze out excess water. Then squirt dish soap on the sponge and squeeze to distribute. No bacteria or germs can live on a sponge full of dish soap.

But to answer your question...I would designate one sponge for dishes, a different sponge for counters, and yet a different sponge for the floor. Some people use different colored sponges to help them keep track of which sponge is used for each job.
